When it comes to our ingredients, provenance and sustainability are hugely important to us. We’re conscious of how our supply chain impacts the environment and our ethos is to use local, sustainably-sourced produce from within the county where possible.

Fish & Seafood

Whether you opt for Kentish dover sole, turbot or sea bass, or Rye Bay scallops, you can rest assured that freshness is at the core of our values. The provenance and sustainability of our fish and shellfish is of paramount importance to us. This, combined with the creativity of our chefs we aim to bring you all the flavours of the sea to the heart of the Kent countryside.

Vegtables

Our fruit and vegetables are sourced from local firms and growers. With a market garden nursery in Lenham providing over two thirds of our fresh produce, reducing our carbon footprint is at the forefront of our buying strategy. Simon Kingsland of RJ Kingsland of Maidstone, is also on hand supplying us with produce direct from the farm. Lastly our favourite spud growing family from Woodnesborough here in Kent, 'The Smiths', consistently provide us with fine varieties all through the year.
